Rhubarb gardening, recipes, and health benefits

All Things Chives (video below)

A handful of chives, basil, and greens harvested from our spring garden. Chives can take over a garden fast, but that isn’t necessarily a bad thing!

They have a delicious onion/garlic flavor, but are much easier to grow than onion bulbs plus, chopping them won’t make you cry.

We love eating chives on top of many dishes like potatoes, pizza, salad, tacos, pasta, or anything really. However, those who haven’t grown Chives before may not know that every spring, Chives produce beautiful purple flowers. Bees love them but they are edible for humans too! Add these onion flavored flowers to any savory dish or charcuterie board for a delicious and delicate touch.

Don’t worry, we always save plenty for the bees!

Chives are not only beautiful and delicious they are also a great sources of vitamin A, C, K, and antioxidants. Like other members of the allium (onion) family, they possess antimicrobial and anti-inflammatory properties. To extract these properties, without eating handfuls of chives, chop and steep them in freshly boiled water to extract and consume chives’ medicinal anti-inflammatory benefits.

If you’re not one to forage wild edibles like chives, be sure to pick up some during your next Farmers Market trip or check out options from Eighth Day Farm. (More information below)

Gardening Tip:

Chives thrive in the sun, so be sure to place your seedlings in an area where the sun hits all day.

Peanut Butter Rice Noodles

Im our opinion, chives go on everything; but these thai inspired noodles look pretty dang good. Add chicken for some added protein & swap the green onions for chives for a fun midweek wildcard. Let us know what you think!
