All Things Rhubarb
Rhubarb is a vegetable at its peak in Michigan throughout May. It contains a high amount of vitamin K1 (potassium) and fiber. Vitamin K, also known as potassium, is one of the most critical vitamins for blood clotting (this stops bleeding after you cut yourself). Vitamin K also works with Vitamin D to increase bone density (bone strength), and some studies have shown it can reduce the rate of bone fractures! This is especially important if you’re a senior, as bone density naturally begins to decline as we age.
Fiber is vital for good digestive health. Most Americans are not getting enough fiber daily, with up to 95% of adults and children not consuming enough each day. Ironically, fiber is not digested by our bodies. Instead, fiber helps to slow food in our system so your body and digest/pull out nutrients in food correctly. Fiber also lowers the risk of many diseases, including colon cancer, irritable bowel syndrome, constipation, diverticulitis, and more.
When strawberries are season, Dr. White’s favorite way to use rhubarb is in strawberry rhubarb pie!

We know, we know… we love pie too! But, consider tossing some rhubarb in your favorite fruit smoothies for a tangy, antioxidant rich, & less sugary alternative.
