Asparagus: featuring Leutzinger Farms

All Things Asparagus (video below)

It’s asparagus season! And it’s officially time to stock up on this veggie from the farmers market.

Asparagus is such a marvelous vegetable and is one of the only northern vegetables that comes up every year once planted!

Once established, asparagus beds can last for 50 years and produce in abundance.

Asparagus is a nutrient dense food but low in calories. It contains lots of vitamin k, folate, fiber, and antioxidants, making it excellent to eat all the time but especially while pregnant!

Our favorite way to eat asparagus is with a little bit of olive oil, garlic salt, pepper, and a squeeze of lemon on the grill. So good!

If you are looking to expand your current garden or start one for the first time, look into growing asparagus!

Key Takeaway:

If you’re planning to grow your own asparagus, you should! It’s low maintenance and doesn’t require much water but be aware that it will take 3 years for your beds to reach full maturity for harvest.
